Tomato thokku


This is a very simple recipe and easy to make with less ingredients which can be stored in the refrigerator for a month.It goes very well with idly ,dosa,upma,roti and seasonings with the chutney which mixed with rice makes a perfect lunch box.Here goes the recipe...


Ingredients
  • Tomatoes - 1lb
  • Tamarind paste -1tbs
  • Chilly powder -2 tsp
  • Oil-100ml
  • Mustard seeds -1tsp
  • Salt to taste
  • Garlic -5to 7 pods(optional)



Method
  • Wash the tomatoes and puree it in the blender with salt,chilly powder,tamarind paste and grind it to a smooth paste.
  • Keep a pan in the stove, add oil and throw in mustard seeds and curry leaves.Add the ground paste to the oil and stir it.  
  • Close the pan with lid and let it cook in the medium flame  till all the water  gets evaporated.Once the water is evaporated cook it in  the low flame uncovered till the oil separates.
  • Add a tsp of oil in a seasoning pan and add the chopped garlic .Fry the garlic till it becomes golden color and add it to the mixture and mix it well.
  • Turn off the stove and let it cool down.Transfer the thokku  to air tight glass bottle and store it in the refrigerator.

Enjoy...................................

  • Use a clean dry spoon to take out  the thokku from the bottle.
  • The amount of oil used is important to maintain the shelf life of the thokku.
  • If you are using fresh tamarind a big gooseberry size and soak it in water to get it soften.

Tomato rice with thokku
  • Chop one medium sized onion, green chilly and curry leaves.
  • Put a pan in the stove and season it with a tsp of mustard seeds,urad dhal,channa dhal,asafoetida ,add in  the  chopped onion,green chilly and curry leaves and fry it till it becomes translucent.
  • Add the required amount of tomato thokku and fry it for a minute.
  • Turn of the stove and add the cooked  rice and mix it well.
  • Garnish it with coriander leaves.Potato fry or chips goes very well with this rice.
  • Enjoy.................
